Easy Homemade Cheesecake Recipe (Creamy, Smooth & Delicious)
Step 8: Bake the cheesecake
Bake at 325°F for approximately 55–70 minutes, depending on your oven and whether you use a water bath.
The outer edges should look set, while the center should still have a gentle wobble when you carefully move the pan. The center should not look liquid.
For an especially reliable doneness check, use an instant-read thermometer in the center of the filling, avoiding contact with the pan. The center should reach about 150°F for this style of baked cheesecake.
Avoid baking until the entire surface is completely firm. The cheesecake will continue to set as it cools and chills.
Step 9: Cool the cheesecake gradually
Turn off the oven and crack the oven door open. Let the cheesecake rest inside for about 30 minutes.
Remove it from the oven and place it on a heat-safe rack. Run a thin knife around the inside edge of the pan to loosen the cheesecake from the sides, but leave the springform ring attached.
Let it cool at room temperature until it is no longer warm, then refrigerate it.
Gradual cooling helps reduce sudden temperature changes, which can contribute to cracking.
Step 10: Chill before serving
Cover the cooled cheesecake and refrigerate for at least 6 hours, preferably overnight.
Chilling allows the filling to firm up and makes slicing easier. For clean slices, use a sharp knife dipped in warm water and wiped dry between cuts.
Release the springform ring, transfer the cheesecake to a serving plate, and add your favorite toppings just before serving.
Enjoy every creamy, delicious slice!
