Total Time: 40 minutes
Servings: 4
Category: Soups & Stews
Cuisine: Italian-Inspired

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 small yellow onion, chopped
  • 4 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes, drained
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon crushed red pepper flakes, optional
  • 5 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 cups fresh baby spinach
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste

Instructions

  1. Heat the olive oil and butter in a large pot over medium-high heat.
  2. Add the chicken and cook for 4–6 minutes, until lightly browned. Transfer to a plate.
  3. Add the onion to the pot and cook for 3–4 minutes, until softened.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add the sun-dried tomatoes, Italian seasoning, paprika, and optional red pepper flakes. Cook for 1–2 minutes.
  6. Pour in the chicken broth, scraping up the browned bits from the bottom of the pot.
  7. Return the chicken and its juices to the pot. Simmer for 10–12 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Reduce the heat to low and stir in the heavy cream.
  9. Add the Parmesan and stir until melted. Stir in the spinach and cook until wilted.
  10. Season to taste, garnish with extra Parmesan if desired, and serve warm.

Notes

  • Use freshly grated Parmesan for the smoothest results.
  • Keep the soup at a gentle simmer after adding the cream.
  • Add extra broth if the soup becomes too thick.
  • Refrigerate leftovers for 3–4 days.
  • For the best frozen texture, freeze the soup before adding the cream, Parmesan, and spinach.
